Eats - The Table is Set: A Four-City Tour Served With a Coke

When I received an invitation to be a part of a fun partnership between a local non-profit and our local Coca-Cola bottler, I knew I couldn't turn it down! This post was sponsored by Coca-Cola Consolidated, but all statements and opinions are my own! I want to extend a warm thank you to them for inviting me to be a part of this experience! 

The non-profit is Soul Food Sessions. It was started as a series of pop-up dinners in 2017 as a way to help break down stereotypes in the culinary world, and increase the opportunities for African American chefs. Soul Food Sessions have partnered with Coca-Cola Consolidated for a four-city tour to spread the mission and open conversation. Together, they will be handing out at least $10,000 in scholarships to culinary students throughout 2018.  They will be kicking off the tour right here in Charlotte on June 19th at Free Range Brewing in NoDa. Then they will then be headed to Washington, D.C, Baltimore and Charleston! So, where do I come in? I not only get to try one of the first creative dishes of the tour, I get to prepare it myself at home and share the recipe with you! How awesome is that?! Without further ado, let's get to the delicious recipe, shall we? This appetizer was created by Chef Greg Williams, a graduate of Johnson & Wales University and owner of What the Fries CLT food truck! We're going to be making Seared Scallops with Purple Carrot Chutney paired with a Coca-Cola Zero Sugar.






You can view the full recipe page here! The recipe takes about 20 minutes of prep time and 40 minutes of cooking time. If you are a fan of vinegar, you are going to love the smell of your kitchen while the balsamic vinegar is deglazing in the pan! Because I am gluten and dairy free, I made sure to choose a potato leek soup that was vegan. Feel free to use whatever style Potato Leek soup fits your preference! The beverage pairing of Coca-Cola Zero Sugar brings to the forefront the richness of scallops combined with the boastful flavors of ginger and garlic in chutney. I couldn't believe how well they truly went together! 
                                             

Overall, this dish was absolutely outstanding! Chef Greg really inspired me to create more dishes at home, especially with that chutney!
