Eats - Vegan & Gluten Free Mushroom Stroganoff

This vegan and gluten-free recipe is inspired by one I found on Pinterest by ElaVegan. It was super quick and easy (even for me!)  to make this healthy and comforting plant-based dish and I especially loved how hearty and filling it was.   • 1 small yellow onion, diced
  • 3 cloves of garlic, minced
  • 1 tbsp extra virgin olive oil
  • 1 package sliced portobello mushrooms 
  • 1 tbsp tamari soy sauce 
  • 3/4 cup vegetable broth 
  • 3/4 cup flax milk unsweetened
  • 2 tbsp cornstarch 
  • Spice mixture (1 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, a pinch of chili flakes, sea salt & ground black pepper to taste) 
  • 1 tbsp 
  • Fresh thyme leaves 
  • 1 frozen package brown rice
